Introduction

Ingredients

4 cups whole wheat flour
1 pkg. active dry yeast
1 cup warm water
2 tsp. sugar
2 Tblsp. olive oil
dash of low sodium salt.
2 Tblsp. light margarine
1 pound of low sodium bacon
1 small onion, diced
1 green bell pepper, diced
2 medium potatoes, diced
1 dozen large eggs
2 cups shredded cheese (cheddar or cheddar jack)
Tips
Onions and Peppers can be added to the bacon and potatoes to be cooked and added to the dough at the same time.
Directions
Dough:
Mix 1 cup of flour with package of yeast.
Stir in 1 cup of warm water.
Add sugar, oil, and salt, and stir well.
Add and mix in flour until soft but not sticky. Turn onto lightly floured surface and knead for about 2 minutes. Leave until doubled in size.
Dice and fry bacon until done, mix in potatoes and cook until almost done. Beat eggs and add to bacon and potato mixture and cook until set.
Roll Pizza roll out to fit an 11 x 17 inch cookie sheet.
Spread margarine over dough. Spread egg mixture evenly over dough. Layer peppers and onions and top with shredded cheese. Bake in oven at 400* for about 10 minutes or until cheese is melted and crust is lightly browned. Let sit for a couple of minutes and cut into 15 pieces.
