Introduction

Number of Servings: 4

Ingredients

    3T rice vinegar
    2T lite soy sauce
    2T brown sugar, packed
    1T fresh ginger, minced
    1tsp yellow mustard
    1T sesame oil
    1.11lb steak (flank, arm, etc.)
    1 sweet red bell peppers, sliced into strips
    1 carrot, shredded
    3 scallions, sliced
    2 ribs of celery, sliced
    2C baby spinach
    6oz Dole Seven Lettuces blend
    1T toasted sesame seeds
    salt and pepper to taste

Tips

Use whatever greens you like - watercress, arugula, mizuna, turnip greens, etc.


Directions

Marinade/Dressing: Mix vinegar, soy sauce, brown sugar, ginger and mustard. Whisk in oil.

Salad: Slice pepper, scallions and celery. Shred carrot. Mix the above with lettuces and baby spinach.

Place 3T of marinade into a plastic bag. Add steak. Marinate at room temp. for 15 minutes. Broil or grill steak 3-4 minutes each side. Let steak rest 5 minutes.

Slice steak into thin strips. Add to salad. Toss salad with remaining marinade/dressing and top with toasted sesame seeds. Season with salt and pepper if desired.
