Ingredients

    2 zucchinis
    1 sweet onion
    1 container of bella mushrooms
    1 green bell peppers
    2 pablano peppers
    2 cans of roasted tomato and garlic
    1 cup water or vegetable broth

Directions

Chop all the vegetables and combine with tomato sauce. Place in crock pot on low for 6-8 hours. Serve over rice or potato. Add cheese, onion, or sour cream to make it your own!
