Introduction
I can't stand olive oil mayonnaise, so I make mine with seed oils whenever possible. GrapeOla is what I had on hand and that is what the nutritional values reflect. Make mayonnaise with walnut, almond, or palm oil for different tastes (I love walnut). Hemp and flax may be too strong. Ingredients

3 large egg yolks at room temperature
1/4 tsp ground mustard
1 tablespon lemon juice at room temperature
1/4 tsp sea salt
1 cup to 1.5 cups GrapeOla Grape Seed Oil
Tips
If the eggs are not room temperature, you run the risk of them not emulsifying properly with the oil. Ideally all ingredients should be at the exact same temperature (this means the oil, too).
Some people have great success just adding all the oil to their immersion blender vessel and then blending away. This always breaks when I try it. Also, do a search for "Alton Brown instructions broken mayonnaise" if you have this problem. The man has saved more eggs in my house than the Easter Bunny.
Directions
Let the yolks and lemon juice warm to room temperature before using. In a vessel that will just fit an immersion blender, whisk the yolks, lemon juice, mustard, and salt to incorporate. Use your immersion blender on low to medium-low speed to begin emulsifying. Add a slow stream of oil, no more than 1/4 tsp per few seconds, while moving the immersion blender slowly up and down (like an oil derrick). After all the oil is incorporated, taste and season. Chill for one hour prior to first use.
