Ingredients

    Chicken Breast (cooked), no skin, roasted, 1.5 unit (yield from 1 lb ready-to-cook(remove)
    Kraft Mayo Light Mayonnaise (made with olive oil), 6 tbsp
    Radicchio, .33 cup, shredded(remove)
    Celery, raw, 1 stalk, medium (7-1/2" - 8" long)(remove)
    Raisins, .25 cup (not packed)(remove)
    Curry powder, 1 tsp(remove)
    Pepper, red or cayenne, .5 tsp(remove)
    Salt, 2 dash(remove)
    Pepper, black, 1 tsp(remove)

Tips

Serve on a crispy lettuce leaf, for a good low-cal crunch.
I'm less of a mayonnaise fan, so I tend to cut it down to about half of what is listed, just adding enough to make it stick together.


Directions

Roast chicken until just done. Wait until cool enough to handle. Shred and mix together with all other ingredients.
