Introduction

A delicious and easy salad that tastes great in quesadillas, tacos, nachos and in salads. A delicious and easy salad that tastes great in quesadillas, tacos, nachos and in salads.

Ingredients

    1 clove garlic, minced
    2 cups black beans, drained
    1 cup frozen sweet corn
    Juice of 1/2 a medium lime
    1 medium red pepper, diced
    1 medium white onion, diced
    3 roma tomatoes, diced
    salt & pepper, to taste
    1/8 tsp cumin, optional but adds a nice flavor

Directions

Chop up ingredients and mix. Add frozen corn, still frozen. Mix. Let sit in refrigerator for 1-4 hours to let the flavors marinate.
