Introduction
The package of Green & Blacks dark cocoa is a must.. most are not dark enough, even Sharfenberger's, to make dark choc cupcakes. The pkg of Green & Blacks is 150gms.. and sold at Whole Foods, but if you don't have or can't get it, then use the darkest cocoa you can find, and use 1.5 cups. Ingredients

* 2 cups boiling water
* 150 grams ORG Green & Black unsweetened cocoa powder (or 1.5 cups darkest cocoa you can find)
* 2 3/4 cups ORG buckwheat flour
* 2 teaspoons baking soda
* 1/2 teaspoon baking powder
* 1/2 teaspoon salt
* 1 cup ORG butter, softened
* 2 1/4 cups ORG evaporated cane juice sugar
* 4 eggs
* 1 1/2 teaspoons vanilla extract

Directions
Beat sugar and butter together 3-4 min until light yellow. Add in one egg at a time (4.. the recipe calculator wouldn't allow me to say 4). Meanwhile, pour 2c boiling water over the cocoa.. whisk until smooth. Let cool. Also, sift all dry ingredients together, twice in separate bowl. Add vanilla to egg/sugar/butter mix. Beat for another minute. Add flour and chocolate mixtures alternately in 1/3s. Pour into 36 medium sized cupcake papers set into tins, and bake at 350 for 15 minutes, test for doneness with toothpick.. depending on oven and elevation, may need to bake for a few more minutes (3-5). If they do need a couple more minutes, suggest rotating the tin 180 degrees.
Remove and cool on wire racks.
