Introduction
Adapted a couple of different recipes to make this one. Made with Jiffy mix, these muffins are easy. With egg substitute and fat free Greek yogurt, they're fairly low calorie (for muffins, anyway). Ingredients

1 box jiffy mix
1/4c egg beaters (= 1 egg)
1/2c greek yogurt (plain or vanilla)
3/4 frozen mixed berries
Directions
Preheat oven to 400°. Spray aluminum liners with cook spray and place in muffin pan.
Combine muffin mix, egg beaters, and yogurt. Blend well. Stir in mixed berries. Divide mix into liners. Bake 20-25 minutes. Cool in pan on a wire rack for 10 minutes before removing from pan.
Serving Size: makes 6 muffins
