Ingredients
-
3 cups canned black beans
3/4 cup erythritol
2 tsp NuNaturals Stevia
4 tbsp coconut oil
2/3 cup cocoa powder
3 eggs, large
6 tbsp ground flax mixed into 9 tbsp water (egg replacer)
3 tbsp vanilla extract
2 pinches sea salt
Directions
Preheat oven to 350F.
Rinse beans very thoroughly and drain them them completely. Now do it again to reduce all "beany" tasting liquid.
In a vitamix/blender, add rinsed beans, eggs, vanilla, coconut oil, sweeteners, and cocoa powder. Blend until smooth, than add salt and pulse until well mixed. Batter will be thin.
Grease 9X13 pan with coconut oil, and pour batter into dish. Top with nuts or other desired topping (optional).
Bake for 30 minutes, or until top and sides are set, and insides are just a little soft.
Cool before serving and enjoy
