Introduction

Dairy-free, gluten-free summer vegetable crab-corn chowder with a southwest twist. Dairy-free, gluten-free summer vegetable crab-corn chowder with a southwest twist.

Ingredients

    3 ears sweet corn, kernels removed and cobs scraped to remove residual kernels and juices - save one bare cob to simmer in with the soup for extra flavor
    3 tomatillos, diced
    1/2 cup diced red bell pepper
    1 can light coconut milk
    1/2 can water
    2 bunches scallions, using all parts except the tip of the white/bulb end, chopped
    1.5 cups cubed potato (German butter ball variety is best)
    1 bay leaf
    2 cloves garlic, minced or crushed
    Salt and pepper to taste
    A few dashes cayenne pepper
    I can crab meat (I used the one from Trader Joe's)

Tips

Limes, cilantro, avocado all options as garnish


Directions

Put all ingredients except the crab and garnishes in a slow cooker and cook on high 3-4 hours or low 6-7 hours.
