Ingredients

    375 ml wholewheat self raising flour
    125 ml wheat bran
    250 ml sugalite (170 g) or another sugar replacement
    125 ml walnuts, chopped
    2 large bananas, mashed
    125 ml apple sauce, unsweetened or baby food
    1 egg, beaten
    125 ml low fat buttermilk

Tips

If you would like a bigger muffin for breakfast, you could make 9 instead of 12 and then they would have 189 calories per serving.


Directions

Heat oven to 180C. Mix the flour, bran, sugalite and nuts. Make a hole in the middle of the dry ingredients and add the bananas,apple sauce, egg and buttermilk. Mix lightly with a fork. Pour mixture into a sprayed muffin tin and fill each section 3/4 full and bake for 20 minutes.
