Ingredients

    1 can Pink Salmon (canned, 14.75 oz)-bones removed
    1 cup crushed saltines
    1 egg (large)
    2 tablespoons Canola Oil (or vegetable)
    Salt, Pepper, Italian Seasoning if preferred

Tips

Can substitute bread crumbs for saltines and add any additional flavors/spices you would like. I use 1 can of salmon for 2 people, but use 2 cans for 4 people-the recipe is easily doubled.


Directions

Mix canned salmon (bones removed as much as possible) with egg, salt, pepper, and italian seasoning. Once mixed, add crushed saltines. Form into patties-typically make 5 larger patties (~3 inches each) or can make into smaller patties if desired. Heat oil in skillet over medium to medium high heat. Place patties into skillet and cook on each side until golden brown/crunchy. Once brown on both sides place on paper towel to soak excess oil.

Serving Size: Makes ~2.5 servings
