Number of Servings: 12

Ingredients

    5 eggs
    1 can pumpkin puree (can only be 1 cup)
    1/4 cup coconut oil (or coconut butter raises the fiber)
    1/2 coconut flour
    1tsp baking soda
    1tsp vanilla
    1-2 Tbs pumpkin pie spice
    1/4 cup honey
    I added vanilla creme stevia

Tips

I used foil lined muffin cups and baked on a cookie sheet


Directions

1) Preheat oven to 400 degrees
2) Put all ingredients in medium sized
3) Whisk until batter is mixed
4)Spray pans with olive oil and muffin papers
Using 1/4 meaure batter and place into muffin papers
5) Bake for 13-18 minutes

Serving Size: MAKES A DOZEN LARGE OR 24 SMALL MUFFINS
