Ingredients

    1/2 cup virgin olive oil
    1/4 cup raspberry vinegar or red wine vinegar (I use white balsamic vinegar)
    1.5 teaspoon Dijon mustard
    Salt and white pepper to taste

Tips

Makes more than needed for the salad.


Directions

Combine the vinegar and salt. Allow salt to dissolve. Add mustard to incorporate. Whisk in the oil until emulsified. Add pepper.

Serving Size: Makes 3/4 cups
