I keep the recipe Gluten-free by using Balsamic vinegar and Bob's Redmill Gluten-free oats; but if avoiding gluten is of no concern to you, feel free to substitute your favorite oatmeal or even breadcrumbs, and for a more traditional flavor you can use worcestershire sauce instead of balsamic vinegar.

Ingredients

    1 clove of garlic, minced
    2 cups fresh spinach or arugula, coarsely chopped
    1/2 cup chopped tomatoes
    1/2 cup grated carrots
    1/2 c chopped yellow or red onion
    1/2 c uncooked Bob's Redmill gluten-free oats
    1 large egg white
    1 tsp each: thyme, paprika, poultry seasoning, dijon or honey mustard (or dry mustard seasoning)
    1 TBSP balsamic vinegar
    1 pound 93% lean ground turkey


Tips

The moisture level can vary from the vegetables; if mixture is too moist add additional oats 1/4 c at a time. If it's too dry, add extra egg white or tomato for more moisture.

*Cooking time can vary; after 20 minutes cut into one of the meatballs to determine level of doneness, there should be no pink remaining inside.


Directions

Preheat oven to 350 degrees.

Combine all ingredients vegetables in a bowl and mix well;

Add in balsamic vinegar, egg white, and all seasonings and mix well;

Mix the oats and turkey in last; form mixture into 15 meatballs and put into a baking pan; bake at 350 degrees for 25-30 minutes.

Serving Size: Makes 15 balls, roughly 1-inch in diameter; 3 balls = 1 serving
