Ingredients

    1/2 cup yellow onion, finely chopped
    2 teaspoons I can't believe it's not butter light
    2 medium tomatoes, peeled, seeded, & chopped
    4 tablespoons green chili peppers, chopped
    3/4 cup fat free shredded cheddar cheese, shredded
    1/2 cup low fat Monterey Jack cheese, shredded
    1 cup fat free cream cheese, softened
    1-2 tablespoons skim milk (optional)

Directions

1. In a medium saucepan cook onion in butter until tender. Stir in tomatoes and chili peppers.. Simmer, uncovered, for 10 minutes.

2. Add cheeses, beginning with cream cheese, until all mixed. You will want to add shredded cheese slowly so that it melts smooth. If mixture becomes thick, stir in milk, 1 teaspoon at a time, until desired consistency. Serve warm.

Serving Size: Makes 8 servings
