I actually used 1/2 Medifast Fajita Seasoning mix. You could use the Taco Bell low-sodium Fajita Seasoning, too.
The Morningstar Crumbles are the Morningstar Farms Meal Starters Sausage Crumbles...use 1/2 cup COOKED (cook it first on a skillet, then weigh it).
On the cheese, I used 2% WW mexican shredded cheese.
Directions
Brown the Morningstar crumbles in a medium skillet over medium high heat, remove and measure out 1/2 cup.
Add 1/2 packet of Fajita seasoning mix and 1/4 cup cold water. Mix well. Let simmer 10 minutes. While the crumbles are simmering, shred the lettucve and chop the tomatoes. Serve in large lettuce leaf 'boats'.
Divide up the mixture into 2 boats - each one has 1/2 meat, then cheese (1/8 cup Mexican shredded 2% cheese), then lettuce and finally tomatoes.
Serving Size: Makes 1 serving which = 1/2 Lean plus 2 green
