Introduction

These low fat muffins will start your day off with loads of vitamins and calcium. They are filling, tasty, and the batter is supposed to last up to 6 weeks in the fridge, although mine is usually gone in a week! Ingredients

    Total Raisin Bran Cereal, 1 18 oz. box
    *Splenda Brown Sugar Blend, 1 cup lightly packed
    Flour, whole grain, 5 cups
    Olive Oil, 1/2 cup
    Buttermilk, lowfat or fat free, 1 quart
    *Better 'n' Eggs egg substitute, 1 cup
    Cottage Cheese, Nonfat, 1/2 cup
    Baking Soda, 5 tsp
    Salt, 2 tsp

Directions

Mix soda, salt, and flour together. Add everything else in and let sit for 10-15 minutes. Bake at 400 for 15-20 minutes until done. I make this ahead of time in a large pan and try to keep it on hand for easy breakfasts or afternoon snacks. They are good with some fat free cream cheese or jam. I have added chopped apples or bananas to the batter when I have some I need to use or peanut butter for extra protein.
