    Gluten Free Baking mix 1.5 cups
    Gluten Free Pancake mix Bob's Red Mill 1.5 cups
    eggs 4 large
    chia seed 3 Tbsp
    coconut milk, canned 1.5 cups
    coconut, vanilla 1.5 cups
    coconut oil .25 cups

Tips

cooks more slowly than typical waffles
sweetened with mix and vanilla coconut milk - does not require syrup.


Directions

cover chia seeds in water and soak 10 minutes
blend eggs, milks, and oil in blender on high
blend in seeds
combine with baking mixes
cook in waffle iron about 8 minutes or until golden brown
