Introduction
I never would have believed how luscious this pie is....totally vegan with no added flours! Dense chocolate flavor. I thought the dates in the crust might conflict with the chocolate flavor, but you can't tell that they are there. Ingredients

Crust:
Raw Almonds, 1 cup, whole
Dates, 1 cup, pitted
Sea salt, 0.5 tsp
Filling:
Mori-Nu, Tofu, silken, firm, 12 oz box
Guittard Extra Dark Chocolate Chips (or other very good bittersweet chocolate, 8 oz
Agave Nectar, 1-2 tbsp (to taste)
Cocoa powder, unsweetened,1 tsp
Non-dairy milk, 2 T
Vanilla Extract, 1 tsp
Tips
You must use "silken" tofu for this recipe. If you cannot find firm silken tofu, I have used Nasoya silken tofu instead (which seems more like soft tofu) and left out the non-dairy milk. It firmed up just fine.
Directions
Crust:
- Place almonds in food processor and process until fine. You can have them as coarse or fine as you like
- Add dates and salt and process until it holds together when you form a small ball
- Press into the bottom of a 9" springform pan. Be sure to come about 1/2" up the side and press edges well to seal
Filling:
- Melt chocolate and let partially cool
-Wash out processor bowl/blade and return to processor
- Add tofu to bowl and process until very smooth
- Add cocoa, 1 T. agave, vanilla and chocolate and process with tofu until smooth. Scrape down sides of bowl if necessary. Taste and adjust sweetness to your liking with remaining agave
- Smooth filling over crust
- Cover and chill in refrigerator. Mixture will firm upon cooling
