My take on low fat Pho

Number of Servings: 1

Ingredients

    3 oz chopped cooked turkey thigh, fat removed
    1/4 c chopped green onion
    2 garlic cloves minced
    1 cup mushroom slices
    1/3 c corn niblets (fresh or frozen)
    4 fresh basil leaves
    2 tbsp. chopped fresh cilantro

    2 cups low fat turkey broth, can or homemade
    1tsp Pho Beef Broth Seasoning

    1 oz dry weight rice noodle sticks, soaked in boiling water 9 minutes), drained
    1 cup Spinach

Directions

Add turkey, green onion, garlic, mushrooms, corn, basil, and cilantro to a heated non stick wok. Stir fry over med high heat until turkey slightly browned.
Add broth and Pho seasoning to wok and stir until bubbly.
Stir in cooked noodles and spinach.
Serve immediately.

Serving Size: Makes 1 large serving
