Ingredients

Hillshire Farm Turkey Smoked Sausage, 12 oz
Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.)
Onions, raw, .75 cup, chopped
Red Ripe Tomatoes, 12 cherry
Egg, fresh, whole, raw, 6 large
Unsweetened Soy Milk, .25 cup
Italiano Pecorino Romano Cheese, .5 oz
Directions
Chop the Turkey Sausage, Potatoes and Onions into small cubes. Add to a pan and cook for about 2 minutes on High. Cover and reduce heat to low. Let cook for about 5 minutes. Stir and cook for 3 more minutes. Turn heat off and remove from heat but leave in pan.
Cut the 12 cherry tomatoes into 1/4's. In a bowl place eggs and soy milk. Use a wisk and mix well. Till your arm burns wisking it. Add the cheese and tomoatoes and mix well. Add the sausage mix. Mix well.
Cupcake molds should be sparyed with Pam. Spoon mix into each mold evenly.
Bake in the oven at 350 for 15 minutes or until set.
