I'm on an alternate fasting lifestyle and enjoying the benefits of low cal foods. This is an attempt to see if a version of low cal chicken noodle soup is possible. Ingredients
-
16 ounces Boarshead Ever Roast Chicken Breast (have the deli slice it as thick as possible; tell them you're cubing it for a salad and need it as close to 1/4" thick as possible) (50 calories for a 2oz serving according to Boars head)
could also cook 16 ounces of thin skinless chicken breast in some broth or water; I just found this to be a nice short cut.
20 cups boiling water
10 Chicken bouillon cubes
8 cloves garlic (chopped or sliced)
2 stalks celery (thinly sliced)
1 Shallot (thinly sliced)
1 Large turnip (diced)
1lb of diced daikon radish (if you can't find this you can substitute another turnip, or another low cal veggie)
2 - 7oz packages of Miracle fettuccini noodles
Tips
Miracle noodles smell fishy when you first open the package, but they do not taste that way. They take on the taste of whatever you cook them with.
Directions
Dice the chicken breast up and set aside.
Dice and slice up all veggies in preparation and set aside.
Take the miracle noodles out of the package and strain them under cool water for at least 20 seconds, use some scissors to cut them into smaller pieces, and set those aside as well.
Boil water in large pot and add bouillon right away so that it dissolves.
Add the garlic to the boiling bouillon and make sure to taste your broth. At this point if it needs anything like seas salt, or a bit of white pepper, cumin, cayenne pepper, liquid smoke; this is the time to be creative with the base taste of your soup. Figure out the combo of seasonings that work best for you (this is more safely experimented with by taking out a cup of the broth and adding seasoning to see how it tastes outside of the pot, so that you don't spoil a whole batch of soup).
Add your noodles to the boiling water.
Next add your veggies, and chicken breast.
Allow everything to boil for about 5 to 10 minutes and then reduce heat to a simmer and let the soup cook for another 35 to 40 minutes or until you feel the veggies are tender enough.
Enjoy!
