Introduction

I was eating so many Luna bars that I got sick of them, and really wanted something that did not have Hexane-extracted soy protein. These are great! I was eating so many Luna bars that I got sick of them, and really wanted something that did not have Hexane-extracted soy protein. These are great!
Number of Servings: 20

Ingredients

    5 C. Crispy rice cereal
    1 C. old-fashioned rolled oats

    Pulse above in food processor to reduce volume by about one third. Add to large bowl, then add:

    1.5 C. Brown rice protein
    1/2 C. (heaping) inulin
    1 C. Chia seeds

    Mix ingredients well.

    In saucepan on stove, on low heat, add:
    1/2 C. coconut oil
    1/2 C. honey
    1/2 C. brown rice syrup
    1-2 Tbsp. Lemon zest
    1-2 Tbsp. Lemon extract

    When everything is melted and runny, add to dry ingredients and combine well. Press into 15.25" by 10.25" jelly roll pan lined with parchment paper. Lay a sheet of parchment over the top and press into pan until there are no gaps. Cool in freezer for a few minutes, then slice into bars. (I cut them into 20 roughly 2" x 3.5" bars).

    Melt 4 oz. of Baker's White Chocolate in a double boiler, and spread over the bars. Yum!
