Introduction

Lemon and chicken just go together! I paired lemon and rosemary and my new obsession, Smoky Paprika with this chicken and baked it on bed of lemon slices! The taste was great! Ingredients

    5 bone in/skin on halved chicken breasts (5lbs)
    2.5 pounds of Golden Yellow Potatoes
    1 TBSP + 1 Tsp Pampered Chef Rosemary Herb seasoning mix
    3 TBSP Kirkland signature extra virgin olive oil
    4 small lemons
    1 Tsp Smoky Paprika

Tips

You can use other baking pans, I just happen to only have Pampered Chef stoneware.
Removing the skin will reduce calories. I removed mine after baking.


Directions

Place your chicken breasts, my package had 5 breasts, in a large bowl. Toss with 1 TBSP Pampered Chef Rosemary Herb seasoning, 1Tsp smoky paprika, 1 TBSP extra virgin olive oil and the juice of 2 lemons. Toss to coat.
In a separate bowl, combine 1 TBSP olive oil, 1 Tsp Pampered Chef Rosemary Seasoning, 2 cloves of garlic with 2lbs of washed and wedged golden potatoes.
In a stone 13x9 pan, spread 1/2 TSP olive oil in the bottom center of the pan. Place lemon slices from 2 lemons, in the middle of the pan and the potatoes lining the edge of the pan all the way around. Place your chicken breast in the middle of the pan on top of the lemon slices.
Bake at 350F for about an hour until chicken is cooked all the way through. Could be less depending on your oven and pan, make sure to check your chicken throughout baking to avoid overcooking.

Serving Size: Makes 10 - 1/2 breast and 3.6 oz Potato servings
