Introduction

Ingredients

    6 thickly sliced Plantains (lengthwise)
    1 lb. Ground beef (you can use turkey meat for a healthier alternative).
    1 cup of Sofrito (you can find this in the international isle)
    8 oz No sodium Tomato Sauce
    2 TSP Ground Cumin
    1 TSP Ground Turmeric
    1 Cup Sliced Spanish Green olives
    2 Cans Drained French Style Green Beans
    2 Cups shredded Monterey Cheese *Optional

Tips

A chopped Jalepeno's istasty too if you like a sweet/spicy combo. (add when browning meat)

Leftover meat makes great for enchiladas, taco and stuffed baked bell peppers!


Directions

PreHeat oven to 350
* Slice plantains lengthwise.
* Line a baking sheet with some olive oil or some form of non stick agent. Place Plantains in sheet and brown Plantains in oven. Be sure to flip plantains constantly to keep from sticking to bottom of dish.

*Brown Ground beef with sofrito. Once meat is cooked mix in Cumin, Tumeric, green olives and remove from heat.

*In a 9x13 baking dish put a medium layer meat spread,Browned plantains, drained green beans, then cheese(optional) . Continue layering until meat mixture is gone or plantains are gone. Usually 2-3 layers for me.

*bake in oven for about an hour
