Ingredients

    3 slices of Bacon
    1 small pepper chopped
    1 medium oniopn chopped
    4 cooked italian, andouille or chorizo sausage chopped
    1 lb of turkey or chicken breast diced into 1" chunks
    1 cup of cooked shrimp
    2 cups of cooked rice
    garlic powder
    pepper

Directions

saute bacon until cooked, remove bacon to a steel, ceramic or glass bowl but leave fat
add onion and pepper until softeneed and then add to bowl
Add the sausage to the pan to render out any fat then remove to bowl
cook the chopped turkey in whatever is left of the sausage renderings, adding olive oil as necessary and sprinkling with garlic powder and black pepper
Throw contents of bowl back into the pan with the turkey adding the rice and the shrimp
Toss together.
Take 1/2 cup salsa and mix with 1/2 cups water and pour over contents of pan.
simmer and stir until salsa mix is absorbed into the dish
add pepper, salt, chili powder, hot sauce or other spices to taste

Serving Size: makes 9 x 1 cup servings
