Introduction
A hearty vegetarian stew that can be cooked on the stove or in the crockpot! My measurements are in grams/ounces because I weigh my food whenever possible instead of just measuring with cups. Ingredients

Potatoes, Carrots, Celery, Onions, Peas, Garlic, Olive Oil, Spices, Vegetable Broth.
(spices: Bay Leaf, Oregano, Thyme, Parsley, salt, pepper)
Tips
If you don't have veggie broth, use vegetable bullion cubes with water, or a packet of onion soup mix (just check the label to make sure it's vegetarian).
Directions
Peel and dice all of the veggies to your desired size.
Slow cooker:
If time, saute the onions and garlic in the olive oil before putting in the slow cooker. Add other ingredients and cover. Cook on high for 4 hours or low all day.
Stove-top:
If not using slow cooker, saute onions and garlic, then add the celery, carrots, potatoes and cook until potatoes are soft. Add the frozen peas 5-10 minutes before serving.
Serving Size: Makes approximately 6 1-cup servings.
