Ingredients

1 lb. lean ground beef
1 large onion, chopped (approx. 1.5 cups)
2 cloves fresh garlic, minced
1 large zucchini, sliced (approx. 2 cups)
1 14.5 oz can stewed Italian tomatoes
1 tbs. dried oregano
1 tsp. dried basil
1c. Water
1.5 c dried rotini pasta
6oz. Shredded mozzarella cheese (optional)
6 tbs. grated Parmesan cheese (optional)
Directions
1. Brown ground beef in large skillet. Drain fat and pour beef back into skillet.
2. Add chopped onion and garlic and cook covered, stirring occasionally until onion is soft. Add zucchini, tomatoes, oregano, basil, water and rotini. Cook covered, stirring occasionally,until rotini is cooked.
3. Top each serving with cheeses.
Serving Size: Makes approx. 6 1-cup servings
