Ingredients

    With the ingredients that you purchase from the store, you should be able to make the salad four times and use up Nearly all the whole ingredients.

    Obviously the idea is to use 1/4 of each ingredient.

    2 handfuls of solid greens(spinach, mixed herbs and/or kale)
    A chopped carrot stick
    1/2 can beans(black/chickpea), rinsed
    1/2 cup cooked rice(with 1 tsp chili powder)
    Celery stick, chopped
    Corn(1/4 of stick or can)
    1/4 small onion, diced
    1/4 red pepper, diced
    1/4 lime

Tips

Dash salad with lime or dressing.
Sub Quinoa for rice, it cooks faster and is a whole protein.

Prep time is only 20 minutes after initial prep due to rice cook time. Is shorter if alternative (pseudo)grains are used.


Directions

1) toss salad on plate
2) mix everything else
3) squeeze lime on salad and mix
4) toss mix onto salad and eat up
