Ingredients

    1 Roma tomato, cut in half
    1 large carrot (or handful of baby carrots)
    1 large stalk celery (cut in half)
    2 mushrooms
    1 clove garlic, peeled
    1 thick slice large sweet onion
    1 slice yellow squash
    1/4 Red bell pepper
    2-3 cups water
    1 tsp. Blend It Up Southwest Spice Mix
    1 tsp. Better Than Bouillon Chicken Base, Reduced Sodium
    1/2 cup Bush's Best Black Beans, Reduced Sodium
    1/2 cup Delmonte Corn, Reduced Sodium
    1 handful Tortilla Chips (about 7)

Tips

Optional Ingredients: 1/2 cup cooked chicken, 1/2 avocado.


Directions

1. Place first 11 ingredients into the Vitamix container and secure lid.
2. Select Variable Speed 1.
3. Turn machine on and quickly increase speed to Variable 10, then to High.
4. Blend for 5-6 minutes or until steam escapes from the vented lid.
5. Reduce speed to Variable 2. Remove the lid plug.
6. Drop in corn, beans and chips. Blend for an additional 10 seconds.
