Ingredients

    1/4 cup extra-virgin olive oil
    6 to 8 cloves garlic, thinly sliced, plus 1 or 2 more whole cloves
    2 teaspoons dried oregano
    1 (6-ounce) can tomato paste
    2 tablespoons red wine vinegar
    2 (15-ounce) cans cannellini beans, drained and rinsed
    2 quarts chicken stock, water, or a combination
    Salt and freshly ground black pepper
    1 large bunch kale, large ribs removed, chopped
    2 Links Chorizo (I used Trader Joes Chicken Chorizo)

Directions

Heat oil in a large pot. Add chorizo with casing removed heat until browned, separate as it cooks. Add garlic and oregano and cook no more than a minute. Add tomato paste and vinegar, and cook another minute. Add beans and stock and bring to a simmer. Season with salt and pepper. Add kale and simmer, partially covered, for 1 hour. Season, to taste, again with salt and pepper before serving.

    Incredible!
    We really love this recipe. The only substitution I make is Turkey Kielbasa in place of the chorizo - no Trader Joe's around :( I use all chicken broth (no water). I'm making it tonight for the 4th time in 2 months! Thanks for the recipe. - 11/12/11

    I think it's nuts that the recipe lists 1 calorie of white wine! White wine isn't even an ingredient! Certainly not a major issue, but v. weird! making tonite without the chorizo. - 12/1/10

    I LOVE this soup! Only difference is I leave out the chorizo! My hubby even likes it and he's usually not into things like this! - 4/23/09
