Ingredients

    1 lb spaghetti noodles
    2 whole garlic cloves, peeled
    1 lb thick sliced bacon
    2 large eggs
    Black pepper
1/2 c. grated Parmesan cheese, plus extra for the table

Directions

Bring large pot of salted water to boil, add pasta. While that is cooking, cut bacon crosswise into 1/2" sections. Put bacon in skillet and cook for 2 minutes. When fat starts to render, add garlic, cook for another 5 minutes until bacon just begins to get crisp. Put Eggs in bowl, beat with fork. Add pepper gratings. Remove garlic from pan, discard some fat if you wish but most of it is going into the pasta. Drain pasta and IMMEDIATELY toss into egg mixture. Mix thoroughly. The heat of the pasta will cook the eggs and turn them into sauce, add bacon w/it's fat, toss again, add cheese and serve. Serves 4 adults, 10 small children or 1 teenager.
