Introduction
This is so good even without the potatoes. If you leave out the potatoes, make sure the leeks are tender because you won't have the extra bake time to finish softening them. Ingredients

2 leeks cut into 1in pieces using white and green parts
2 small zucchini diced into little cubes
2oz full fat feta
2T dry dill
1c. red potato, thinly sliced
1/2t salt
1/4t white pepper
1T extra virgin olive oil
Tips
I use the full fat feta because so little is used and it melts better. The recipe is low calorie; you don't need to use the fat free.
Directions
Preheat oven to 375. Heat oil then add leeks, zucchini, salt and pepper. Sauté while stirring occasionally until tender (about 5 min) Turn off heat, stir in feta and dill.
Place alternating layers of potatoes and leeks in a round casserole dish, ending with the leek mixture on top. (I also lightly salt the tops of the potatoes before adding mixture) Bake about 30 minutes or until potatoes are tender,
