Introduction

This recipe make about 4 2-3" pancakes. They're not very sweet, but then sweet is what got me so fat and in need of Spark! I added about 1-2 tsp. of honey and they're sweet enough. Any suggestions to improve would be welcomed. I used left over boiled sweet potato, but couldn't find calorie amount for boiled no salt, so used the baked w/o salt calorie information. Ingredients

    3/4 c. cooked mashed sweet potato
    2 tablespoons Heart Smart Bisquik
    2 egg whites
    1 pkt splenda
    pumpkin pie spice to taste (I used 1 tsp.)
    smidge of sea salt to bring out the sweetness (less than 1/8 tsp.)

Tips

I used a butter flavored cooking spray. I also sprayed the end of the spatual I used to flip the pancakes.


Directions

Mix all ingredients, place on hot griddle sprayed with Pam.
Spoon mixture, and smooth into shape...cook as regular pancakes. The 10 min. is approximate depending on thickness and electric or gas stove top.
