Ingredients

    1 C Old Fashioned Quaker Oatmeal
    1 C Whole Wheat Flour)
    1/4 C Splenda,)
    1/2 tsp Salt
    4 tsp Baking Powder
    1 Egg,
    1 C Milk, 1%
    3 Tbs Applesauce, unsweetened
    1 Tbs Canola Oil
    1/3 C Ocean Spray, Craisins Original Sweetened Dried Cranberries

Tips

This is similar to corn bread - it's very good with a little honey.


Directions

Preheat oven to 350 degrees. Combine all the dry ingredients in a large bowl. In another bowl mix the wet ingredients. Stir the wet into the dry, mixing just to combine. Pour into a greased 8" square pan.
Bake for 20 to 25 minutes until lightly browned and when a toothpick inserted in the middle comes out clean.


Serving Size: Cut into 9 pieces

    Incredible!
    It makes a wonderful snack or breakfast bread. I used whole cranberries because I had some I needed to use up, and that made the squares more tart --- but tasty. And it's hearty. Will use craisins next time, or maybe blueberries. - 6/30/19
