Ingredients

    2 cans chopped or minced clams with juice
    2 medium red potatoes cubed
    3 stalks celery with leaves chopped
    1 yellow onion chopped
    1 large can diced tomatoes
    1 can Rotel tomatoes with green chilies
    1 jalapeņo pepper seeded, cored and diced
    1 slice think bacon - cut into 1/4 in strips
    2 slices turkey bacon - cut into 1/4 inch strips
    chopped green onion for garnish

Tips

if you can get fresh clams they will make it much better
goes well with crusty sourdough bread
can also be simmered for 30 minutes rather than using the slow cooker


Directions

chop thick bacon and render the fat reserve enough to lightly coat the bottom of a nonstick pan
quickly fry onion and potato in bacon fat until lightly golden drain and put in crock pot
fry turkey bacon until crisp
added all ingredients except green onion
set on low cook for 3-5 hours
add green onion slices just before serving

Serving Size: makes 4 cup and a half servings
