Ingredients

    3 cups shredded zucchini
    1 medium onion chopped
    3 cloves garlic minced
    4 cups chicken broth
    3 Tablespoons White rice uncooked
    1 large egg beaten
    3 Tablespoons grated romano cheese
    2 Tablespoons dried parsley

Tips

if soup too thick add water at end of cooking!


Directions

saute onion and garlic in olive oil
add broth and 3 Tablespoons rice
simmer covered for 10 minutes
add zucchini an cook for additiional 15 minutes UNCOVERED
Beat egg, parsley and chesee and add to soup

Salt/Pepper to taste

Serving Size: Makes 7 one cup servings
