Ingredients

2 boxes (8 servings) any flavor sugar free jello, divided.
2 oz. cream cheese
3/4 c. heavy cream
water & ice
Tips
Yes, it is basically just Jello! But gives a little variety, and makes a pretty presentation.
I "invested" in dessert glasses from a 2nd-hand store. They can make 'a little something' feel special, so no one has to feel 'Dessert Deprived'!
Directions
Boil 1/2 c. water. Dissolve 1 pkt of Jello into it. Then add enough water and ice to total 1.5 cups. Divide into 7 fancy dessert glasses. Chill for an hour.
Warm the cream cheese in microwave for about :30 sec. Stir. It should be soft. Boil 1/4 c. water. Add about 2/3 of a packet of Jello. (Precise measurement not needed.) Stir until dissolved. Add an ice cube to cool. Then very slowly stir it in to the cream cheese. This is layer #2. If the Jello for the bottom layer is now firm, then top with this layer.
Whip the heavy cream. Gradually sprinkle in the last 1/3 of a packet of Jello WHILE THE CREAM IS STILL LIQUID. When you have fluffy peaks, split into the dessert dishes for the top layer.
Chill again for at least a half hour. Enjoy!
Serving Size: 7 small parfait glasses. You could also probably get 8-10 "shooters" out of it, if you have dessert / 'shot' glasses.
