Introduction

Ingredients

    Pork tenderloin
    Clubhouse greek seasoning
    chicken broth
    onion
    peppers
    long grain uncooked rice

Tips

When in a super hurry I even do this with frozen meat, just add 20 minutes or so to cooking time. My family likes it fairly well seasoned, so you can adjust greek seasoning to taste.


Directions

Spray casserole dish with non-stick spray
Rub pork tenderloin with greek seasoning (can sub boneless skinless chicken breasts)
Add 4 cups low sodium chicken broth
Add 2 cups uncooked rice
Add diced peppers and onions
Stir just enough to ensure rice is level and all covered by broth. Cover with foil and bake for 45 min in 375 oven.
