Introduction

this is a great tasting one pot meal. I didn't mention salt, pepper or other seasonings because that, I feel is a personal choice.I use a little salt (1/2 t) and about a teaspoon ea. of Cajun seasoning and Chipotle powder. this is a recipe even kids can make and it can be quick if need be. this is a great tasting one pot meal. Ingredients

    Saute chopped onion and garlic in 2T of oil. Use a large Dutch oven because this makes a lot. Brown and crumble the meat and drain well afterwards. I pour it into a colander lined with paper towels and I blot the meat well. Now open all cans of beans,vegetables and sauce and add to the pot with the meat, onion and garlic. Mix well, season as you like and heat through. this can be quick if it needs to be, but taste improves with long simmering over a very low flame (or probably in a Crock Pot if you like). Serves 10

Tips

You can cut the Sodium considerably if you use low sodium beans, and tomato sauce. The calorie and nutrient content will otherwise be nearly identical.


Directions

Brown and crumble meat with garlic and onion. Drain very well. Add all vegetables and sauce to the meat and heat through. Serve.
