Introduction

They are tasty enough for dads and kids too, and they won't even know they are high in fiber and low in sugar. Ingredients

    1/2 c Almond Butter
    1/4 c coconut oil
    1/2 c Applesauce, unsweetened
    1/2 c Raw sugar
    2 Eggs
    1 tsp Pure Vanilla Extract
    1 c Flax Seed Meal
    2 Tbs Nutritional Yeast
    1 c Water
    1.5 c Whole Wheat Flour
    1/4 c Wheat germ
    1 tsp Cinnamon
    1 tsp Baking Soda
    1.5 tsp Baking Powder
    1 c Old-Fashioned Rolled Oats
    1/4 c Ocean Spray Reduced Sugar Craisins
    1/2 c Raisins
    1/4 c Coconut, shredded unsweetened
    1/3 c Pumpkin Seeds
    1/2 c Dark chocolate chips

Tips

You can easily substitute butter for the coconut oil, or omit and add an additional 1/4 c almond (or other nut) butter.

Substitute your favorite dried fruit/nuts/seeds.

Store these in the refrigerator up to 4-5 days or freeze for up to 1 month.


Directions

Preheat oven to 350 degrees. Grease or spray a 9x13 pan.

Beat almond butter, coconut oil, applesauce and sugar until creamy. Add eggs and vanilla; beat to mix. Add flax meal, nutritional yeast and water; beat to mix.

In a separate bowl, whisk together flour, wheat germ, baking soda, baking powder and cinnamon.

Gradually beat flour mixture into wet ingredients. Stir in Craisins, raisins, coconut and pumpkin seeds. Fold in oats and chocolate chips.

Press dough evenly into the 9x13 pan and bake for 20-25 minutes.
