Introduction

Ingredients

    pork tenderloin
    lard or cooking fat
    sherried wine
    large onion
    four potatoes
    four carrots
    herbs du provence
    salt and pepper

Directions

Preparation: peel potatoes and carrots, chop onion coarsly, cut pork tenderloin into three equal pieces.
Cooking: Brown the tenderloin pieces in some fat, when both sides are browned, add 1/2 cup sherried wine and 1/2 cup water. Sprinkle in herbs du provence and add salt and pepper; stir together. Allow to boil 2 minutes and then reduce heat to low. Add carrots and potatoes. Salt and pepper the top and cover. Cook thoroughly for 40 minutes on low.

Serving Size: Makes three large servings for dinner.
