Ingredients

    2 cups whole wheat flour
    1.5 tsp baking powder
    1 tsp baking soda
    1 tsp allspice
    1 tsp cinnamon
    1/2 tsp ginger
    1/2 tsp netmeg
    1/2 tsp salt
    1 cup pumpkin puree
    1 Tbsp chia seeds mixed with 3 Tbsp water (or egg)
    2 Tbsp apple cider vinegar or lemon juice
    2 - 3 cups almond or non dairy milk (I use 2.5 usually)
    1 tsp vanilla
    Tbsp maple syrup

Directions

Mix dry together
Mix milk with vinegar in a bowl and stir.
Mix chia seeds with water and let sit for a few minutes.
Add chia seeds to milk mixture then add pumpkin, vanilla and syrup.
Combine the wet and dry ingredients and stir until just combined.
Ladle 1/4 cup batter onto hot skillet and cook until bubbles appear. Flip and cook another minute or so.
Yum!!
