Ingredients

    6 c. homemade vegetable broth (no salt added)
    1 c. cooked pearled barley*
    1 can (16 oz.) Bush's Best White Beans (well rinsed)
    1 c. cubed chicken breast
    1/2 c. baby bok choy, thinly sliced
    1/2 c. zucchini, coarsely chopped
    1/4 c. celery, finely chopped
    1 T. sundried tomatoes, finely chopped
    3/4 t. dried tarragon
    1/4 t. Old Bay seasoning
    2 t. extra virgin olive oil


Tips

I cook the barley ahead of time in homemade vegetable broth (1 c. barley to 2 1/2 c. broth).


Directions

Heat olive oil in pan till smoking. Add vegetables and seasonings. Sautee vegetables until almost translucent. Meanwhile, add broth, cooked barley, white beans and chicken to slow cooker. Add sautéed vegetables and seasonings to slow cooker. Cook on high for 4 hours.

Serving Size: Makes 4 main course servings, 2 1/2 cups each
