Ingredients

    1 package of ground turkey (1.25 lbs)
    1 cup shredded cheese
    1 cup skim milk
    1 onion, chopped
    1/2 cup heart healthy Bisquick
    1/2 tsp salt
    1 tomato, sliced
    2 tsp parmesan cheese
    2 eggs

Directions

1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
2. In 10-inch skillet, cook ground turkey and onion over medium heat 8 to 10 minutes, stirring occasionally, until meat is cooked through; drain. Stir in salt. Spread in pie plate. Sprinkle with shredded cheese.
3. In small bowl, stir bisquick, eggs, and milk with fork or wire whisk until blended. Pour into pie plate.
4. Place sliced tomatoes on top and sprinkle with parmesan cheese
5. Bake about 25 minutes or until knife inserted in center comes out clean.
High Altitude (3500-6500 ft): Bake 30 to 35 minutes.

    I almost hurt myself trying to eat more of this than I should have! This was so tasty! You would never know it was lowfat and high in protein! I am making it again because it only lasted a few days. I took it to lunch and ate it for dinner everyday until it was gone!! :) - 10/16/12
