Ingredients

    1.25 lbs. boneless pork loin
    1 cups beef broth
    1/4 medium onion, chopped
    Chili powder too taste
    1/2 packet taco seasoning

Tips

I served this on 2 8 inch whole wheat tortillas, 2 Tbsps guacamole, 2 Tbsps sour cream, 2 Tbsps salsa, 1/4 cup seasoned black beans, and some shreeded cheddar cheese.

I did not include toppings in the calorie content... calories are only for the meat.


Directions

Pour beef broth into deep baking dish with a lid (i.e. casserole dish), with chopped onion and chili powder. Slice pork loin about 2 inches wide cross grain. Place in deep baking dish and cover, then braise for 2 hours in the oven at a temperature of 190 degrees.

After 2 hours check the meat for doneness, braise longer if needed. Place the meat in the refrigerator and cool for about an hour. Then shred the meat, place it in a skillet with about 1 Tbsp of olive oil (preheated), and cook with 1/2 packet of taco seasoning. Pour in about 1 cup of the braising liquid, cook unti liquid slightly thickens.

Serving Size: Makes five 4 oz. servings
