Ingredients

    1 cup chopped onions
    1 cup chopped mushrooms
    1/2 cup frozen, chopped spinach
    1 cup liquid egg whites

Tips

Add a little salt and pepper to taste. Easily reheated in microwave for about 1 minute, 30 seconds (covered) at 70% power.


Directions

Preheat oven to 375 F and spray an 8" square glass baking pan with non-stick cooking spray. Coat a saucepan with cooking spray and place it over medium heat. Saute the onion, mushrooms and spinach until tender. Pour half the egg whites into the prepared baking pan. Evenly spread the vegetables on top of the egg mixture. Pour the remaining egg whites on top, covering the vegetables. Place the baking pan in the oven and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
