Introduction

Number of Servings: 4

Ingredients

    1lb Chicken
    1 can Chickpeas
    5 small Tomatoes (I use Campari)
    1 medium Onion
    1 tbsp Coconut or Olive Oil
    1 tbsp Cumin (ground)
    1 tbps Chili powder (add as needed)
    1 clove garlic or 1 tbsp garlic powder
    Dash of salt
    2 tbsp balsamic vinegar

Tips

You can vary the amount of chilli powder to get the right amount of heat, or add crushed red paper flakes to kick it up.


Directions

1. Combine the dry ingredients
2. Trim the chicken of fat and cut into 1" cubes
3. Heat oil in the pan
4. Add onions and tomatoes, let cook for 5 minutes
5. Add chicken to the pan
6. sprint dry ingredients over pan and mix with a wooden spoon
