Ingredients



    Flank Steak, 1 lb
    *Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 1 serving
    Mushrooms, fresh, 2 cup, pieces or slices
    Onions, raw, 1 cup, chopped
    Olive Oil, 1 1tsp
    *1/4 tsp garlic salt, 4 serving
    *Cumin seed, 2 tsp
    Lime Juice, 1 lime yields
    *Spiced Apple Cider, 2 oz
    Water, tap, .5 cup (8 fl oz
    Cheese, Mozzarella, Low Moist/Part Skim (Lucerne), 3 oz
    *Garlic (1 clove), 4 serving

Directions

Mince garlic, onion and mushrooms.Saute garlic, onion, and mushrooms in sauce pan. When tender add can of tomatoes. Sprinkle steak with cumin and garlic salt.
In separate griddle pan, add olive oil and brown steaks 2 minutes per side. Then reduce heat to low. Pour in water and apple cider. Let simmer 4 minutes.
Transfer steak to a broiling pan. Spoon tomato mixture over steak. Top with mozzarella cheese. And roll the steak over like a tube.. Secure with wet toothpicks. Broil for 2-3 minutes until cheese melts. Serve with a green lettuce salad.
